Furosen sakes are made in the most time-consuming way imaginable. The brewers wait for yeasts and lactobacilli to arrive naturally. They ferment slowly, and they press the sake not with machinery but with rocks and gravity.
The rice Kame-no-o that is used in this sake is an ancient table rice varietal that was almost extinct due to the difficulty in growing it with modern farming techniques. Complex and savoury character, with wonderful ripe fruits.
