Wild Pony is made using a blend of Riesling, Silvaner, and Weißburgunder. The winemaking process involves long maceration and spontaneous fermentation with indigenous yeasts in neutral oak barrels. The wine is aged under flor (sous voile) in large foudres, which adds to its complexity and character. Aromatic and textural, offering a bouquet of ripe vineyard peaches, orange zest, and honey. Refreshing yet complex, with a balanced acidity and a lingering finish. Unfiltered, no additions.
About the Producer

Bianka and Daniel Schmitt are two talented young winemakers making biodynamic wine without additives in the Rheinhessen region of Germany. The wines are pure, fresh, and lively. Rheinhessen is the largest wine growing region in Germany, and has been largely associated with bulk production. However, in recent years, the region’s reputation has begun to shift as a new generation of younger, more innovative growers are reducing yields and honing in on the largely undervalued terroir of this region. Bianka and Daniel produce wines of the highest quality with as little intervention as possible.
