Karl Sjöström and Mikael Nypelius are the masterminds behind the incredible mini cosmos known as Fruktstereo, which has been one of Sweden’s most forward thinking agricultural projects in the past 10 years. Here, multifruit fermentations take centre stage, and the idea of creating delicious beverages working across a range of different raw materials is the focus.
Inspired by forward thinking friends, cider and natural wine producers and undeterred by the cold climate not suiting chardonnay or pinot noir grapes, they went foraging for apples, pears, plums, berries and basically everything they could ferment into something drinkable (in the beginning with varying degrees of success).
Karl and Mikael use only sustainably grown swedish produce without pesticides and indgenious yeast in the fruit, without additivies and steafastly do not manipulate the fruit in any way they do not see as natural.
