A new collaboration with the renowned Four Horsemen restaurant in Brooklyn, New York.

A must-visit for any wine lover in New York, the Michelin starred The Four Horsemen has been a big supporter of Muri from the start. Famous for having one of the best wine lists in America, and a drinks program driven by an industry legend - Justin Chearno - the restaurant won the James Beard award for Best Wine Program in 2022.

In November 2023, Murray and Justin met at the restaurant to see if there was something cool that they could produce together. Guests at the restaurant are famously spoiled by the epic wines but Justin wanted those not drinking to feel the same sense of occasion. It was, he said, important that the bottle was more 'wine-adjacent' as The Four Horsemen was after all a wine bar, but also that the drink could serve as versatile pairing for the amazing food coming out of the kitchen.

Ideas were exchanged and many trial bottles sent across the Atlantic. It was a breezy and serene collaboration. Justin was onboard with almost everything, although plenty of time was spent toning down what he suggested was Danish predisposition to 'volatile acidity'.

The blend has turned out better than dreamed. Creating a still red without alcohol is incredibly hard, and collectively the team at Muri and Justin have managed to land upon something that was balanced, textured, complex and innovative.

A silky still red made from Stevnsbær sour cherry wine, ice-clarified tomato water, lacto-fermented beetroot, bay leaf and green peppercorn water kefir. 

Imagine ripe red fruit with balanced acidity and an intricate savouriness from the salty beetroot ending with a lightly spicy finish.

Superb with duck, root vegetables, or ideally the delicious homemade sausage with mashed potatoes and prunes that is on the menu at the Four Horsemen.

Beyond Alternative

MURI is inspired by the gastronomic community in Copenhagen, particularly the city’s expertise in fermentation. They use culinary techniques and unusual ingredients to create blends that go beyond other alternatives.

Obsessed by flavour development and changing perceptions around the non-alcoholic category, the team at Muri are devoted to quality which is why they work with small-scale farmers and forage botanicals in Danish forests.

By using flavours and techniques connected to a culinary sphere, the cuvées are an ideal companion to a plate of food. A progressive take on the traditional wine pairing.

Murray Paterson founded Muri in 2020 after working as a distiller at the groundbreaking Empirical Spirits distillery in Denmark. Ioakeim Goulidis then joined after a spell at the Noma Fermentation Laboratory.
