A playful and dry sparkling rosé, Uzume is inspired by the nostalgic combination of strawberries and cream. Strawberries are fermented in 3 different ways - through carbonic maceration, using lacto-fermentation and with a wine yeast - to accentuate their deliciousness. The blend is given its luxurious creaminess from a yoghurt whey.
The addition of an ice-clarified tomato wine and beechwood smoked vanilla imbues the blend with further depth and a complex savouriness.
