A non-alcoholic silky still red made from Stevnsbær sour cherry wine, ice-clarified tomato water, lacto-fermented beetroot, bay leaf and green peppercorn water kefir.
Imagine ripe red fruit with balanced acidity and an intricate savouriness from the salty beetroot ending with a lightly spicy finish.
Superb with duck, root vegetables, or ideally the delicious homemade sausage with mashed potatoes and prunes that is on the menu at the Four Horsemen.

A must-visit for any wine lover in NYC. Owned by James Murphy from the band LCD Soundsystem, the Michelin starred The Four Horsemen has been a big supporter of Muri from the start. Famous for having one of the best wine lists in America, and a drinks program driven by one of the industry legends - Justin Chearno - the restaurant won the James Beard award for Best Wine Program in 2022.
Ideas were exchanged and many trial bottles sent across the Atlantic. It was a breezy and serene collaboration. Justin was onboard with almost everything, although plenty of time was spent toning down what he suggested was Danish predisposition to 'volatile acidity'.
The blend has turned out better than all of us dreamed. Creating a still red without alcohol is incredibly hard, and collectively we managed to land upon something that was balanced, textured, complex and innovative.
Tragically, Justin passed away suddenly in August 2024, leaving all of the wine and hospitality community completely devastated. We hope that the blend will contribute a small part to Justin's huge legacy. It's warm, it's innovative, and it's inclusive.
