Red fruits and spice. Fully de-stemmed and into stainless steel tank for wild fermentation with only a small amount of sulphur at bottling. A lovely bottle of Pinot.
From a plot with a more natural philosophy in the vineyards and the cellar, the fermentations evolve and adapt from one year to another in order to obtain the desired density of sugar. However the restrictions imposed by the Institut National des Appellations d’Origines have meant a rejection of the product of Macvin appellation of Jura since 2015. Now in a more free and personal approach to their wine, Les Dolomies produces off appellation. Last Macvin from Les Dolomies under its AOP with 2/3 mout and 1/3 of marc.
