Domaine Didon Bourgogne Blanc 2022

The 2022 Bourgogne Blanc is a blend of Chardonnay from Beaujolais on granite sand, Beaujolais on clay loam soil, and Maconnais on limestone. The wine is aged in barrel and has zero additions. This is a rich and complete wine, that will reward some patience however is already delicious today.
David and Naïma Didon have settled in an old farm in Chassey-le-Camp in the Côte Chalonnaise. David works for Domaine de Montille in Volnay, where he is responsible for all vineyard work and has overseen the domaine’s conversion to biodynamics. The road to making wine under his own name came through David’s longstanding friendship with Julien Altaber and Dominique Derain in Saint-Aubin. The encounter with their wines opened his eyes to the fact that vinification without additives can produce wines of a very special character. Spontaneous fermentation, whole clusters, no additions at all, no fining or filtration and no use of new casks are just some of the parameters that help to create a small array of wines that are bright, refreshing and always vibrating with energy. Domaine Didon’s wines are of an incredibly high quality despite the modest appellation the wines carry on their labels.
