This is the Hautes Côtes de Beaune Blanc 'Les Monts De Fussey' from a small south-east facing parcel of Chardonnay vines at 400m altitude, just above the village of Echevronne that borders the Hautes Côtes de Nuits. Awesomely taut and concentrated reflecting the very low yields, but balanced with a generosity and broadness on the rich, textured palate.
Crushed, long 6-hour press cycle, ambient yeast fermentation with pied de cuve, aged 12 months in 228L and/or 600L barrels, no fining, occasional light filtration, minimal SO2 addition only if necessary during aging and before bottling.
