Time for the vine to regenerate after harvest, thus respecting its dormancy.

The time for the terroir to express itself by favoring the natural cycle of life.

Time for the grapes to ripen, to gorge themselves with sugar, to be picked at the best time and to offer musts with a beautiful balance, naturally, thanks to their own yeasts.

The time for our wines to be aged for a long time on their lees so that they are a pure reflection of their terroir and their climate.

Time for our vintages to age in the cellar, at least 4 to 5 years, to express all their character, their vintage.

About the Producer

A young winemaking couple, Salima and Alain Cordeuil are based in the Côte des Bars, in Noé les Mallets, a village sheltering the highest hillsides in Champagne. Here, slopes can reach up to 300m above sea level, a drastic increase compared to the lower levels found in the Montagne de Reims.

Alain and Salima’s journey in wine started in 2009 when they were able to take over 4ha from Alain’s family. They made their first wines in 2011 and initiated the conversion to organic farming in 2012 becoming fully certified in 2015.

Completely dedicated to organic farming, their focus is on minimal intervention, zero dosage, and long Sur Latte aging to extract a tense, precise, and delicate harmony in their wines. All of their wines are then aged in bottle for 3-5 years before disgorgement. These are serious, vinous Champagnes, which manage to simultaneously convey a joyful, vibrant expression of their terroir while remaining technically strong and highly age worthy.
