This year, Kiyosumi Shirakawa’s flagship cuvée “ Tabletop Delaware (TTD)” is a blend of ripe Delaware and blue Delaware. At the brewing stage, the tropical fruits of banana and pineapple notes in full swing. By the time the alcoholic fermentation is over, it has a surprisingly dry finish. By blending the dry wine with Blue Delaware, the flavour profile is clearly defined, dry white wine with a hint of fresh tropical flavour.
