Eau de Vie from Domaine Labet. Selection of Chardonnay from the Le Clos parcel, 1 ha planted in 1950. The terroir here is clay and blue marl. Aged 6 years in old barrels including 1 year aging under a veil (sous-voile) of bacteria and native yeast. Bottled Jul 2021.
