Crossover Summer Song 2022
Process: A blend of 1 & 2 year old golden ales brewed with malted barley, malted rye, malted oats, and raw wheat. Spontaneously fermented and aged in neutral French oak barrels. We refermented the beer on organic Driscoll Maravilla raspberries from Herefordshire and Morello cherries from Kent. The beer was on fruit for 5 months before being added to freshly emptied Bushmills whisky barrels for a further 7 months. The beer was then finished with Madagascan Bourbon vanilla pods before further blending and packaging.
Conditioning: Packaged with a small amount of priming sugar for natural carbonation in the bottle. We do not add yeast at this point, or at any point in the process. Bottles laid to rest on side and conditioned until release.
Ingredients: Malted barley, malted rye, malted oats, raw wheat, aged hops (whole leaf fuggle, saaz & strisselspalt), driscoll maravilla raspberries, morello cherries, water.
